SPIRAL OMELETTE WITH SPECK
These speck and omelette spirals are a rustic, tasty starter. A quick, simple dish which will have your guests going back for seconds... because one always leads to another!
Perfect as an entrée before Christmas lunch.
Recipe for 4 people:
- 4 eggs
- 1 shallot
- 4 sun-dried tomatoes
- 2 carrots
- 8 slices of speck ham
- 20ml milk
- Pepper to taste.
- Butter for greasing
Cut the sun-dried tomatoes into small cubes. Wash and finely slice the shallot. Chop the carrots finely.
For the omelettes, crack the eggs into a bowl, add the milk and beat lightly. Add the sun-dried tomatoes, carrots and shallots.
Melt a little butter in a pan, and cook 4 small omelettes.
Place three slices of speck on a chopping board, slightly overlapping one another (the amount of speck you will need will vary depending on the size of the omelette - the speck must fully envelop the omelette). Place on top of the lukewarm omelette. Roll it all together and cut into spirals. Serve hot or cold. Enjoy your lunch!
