Egg Sandwich


> Extra virgin olive oil

> 2 eggs

> 2 whole grain buns or English muffin

> 1 ripe avocado

> 1 wedge lemon

> 1 wedge lime

> 1/2 cup baby spinach

> 2 pieces wild caught smoked salmon

> Pink Himalayan salt

> Black pepper

> Toasted sesame seeds

> Chopped chives



  1. Grease a ramekin with extra virgin olive oil. Crack an egg into the ramekin and place it on the perforated tray in the Smeg steam oven.
  2. Attivate the timer for 1 minute and heat the oven to 100% steam. Follow the prompts of the steam oven to fill with water and start the activation.
  3. In the meantime, mash the avocado and squeeze in the lemon and lime juice in a small bowl. Toast the buns in the Smeg toaster and spread each side with the mashed avocado mixture. Top the bottom half with baby spinach, salmon, steamed egg. Sprinkle both sides with Himalayan salt, black pepper, gomasio and chives. Enjoy!
